Kakigori is a beloved Japanese shaved ice dessert that has been enjoyed for centuries. Though generic Kakigori is a summertime staple at Japanese festivals, the dish has been elevated to an art form in many dessert shops around Japan. Unlike the typical shaved ice found in snow cones or snowballs, modern craft Kakigori is known for its incredibly light and fluffy texture, achieved by finely shaving high density purified ice blocks with precision.

Temaki Den, has always had a sweet tooth specifically for iced desserts. With dessert options limited to ice cream in the Denver metro area, it’s been Kamo’s dream to share this tradition with the Denver community. After experimenting with a kakigori machine at Temaki Den, Kamo decided to open Kakigori Ken in 2024 as a temporary summer pop-up at The Source Hotel.
At Kakigori Ken, all syrups, condensed milks, and yogurts are made in-house with local dairy and organic fruit purees. Our slow freeze, high density ice blocks are sourced from a local specialty ice purveyor using reverse osmosis purified Denver tap water. With an emphasis on seasonal and local ingredients, Kakigori Ken has partnered with local farmers to make use of imperfect fruits that otherwise may not be used or sold in markets. Our milks and creams are from Longmont, CO, while our seasonal fruits are sourced directly from Ela Family Farms in Hotchkiss, CO in addition to other organic local farmers at the farmer’s markets. We’re also proud to feature Japanese cream puffs from Miyagi-Dough, supporting local businesses and promoting authentic Japanese flavors.
As a sister project to Temaki Den, Kakigori Ken carries the same dedication to quality and authenticity.
